Over the weekend, we celebrated the birth of my husband, the one and only MJWizzy. A couple years back, I made him Velvet Elvis Cupcakes and this year he requested them again.
What is a Velvet Elvis Cupcake, you ask? Well it’s a banana cupcake laced with chopped bacon covered in peanut butter frosting. It sounds weird, but the salt of the bacon cuts into some of the sweetness. The King himself was known to have loved peanut butter, bacon and banana sandwiches – this is our nod to his tastebuds, in cupcake form.
I’m still experimenting with the banana cupcake portion of the recipe – I haven’t found one that is quite perfect, but the one below held up pretty well. It was perhaps just a little more dense then I was going for. Since I’ve adapted other recipes, I’ll point you in the direction of those recipes.

A note on adding bacon: For 12 cupcakes, cook 1 package of bacon first (I do mine in the oven), let it cool and chop it up. Reserve 4 slices for garnish. After you have mixed your full cupcake batter as directed, fold in the bacon at the very end, just before spooning into cupcake tin.

I was raised on boxed cake mixes – they’re pretty fool proof and always turn out light and fluffy. I looked for this Banana Cake Mix at the store but no luck. If I find it, this will be my next trial for the cake portion.
