Last year I posted my wish list on my birthday, which happens to be today. Last year? Well, it was a busy one and it’s only going to get busier, and better, in my year to come. With all the gifts that a wedding brings, I couldn’t think of much to want for this birthday. So my simple little wish is to try and remember to take a step back, and really look and enjoy this crazy business of getting older, getting married, and attempting to be a grown-up.
But just because I’m getting older, doesn’t mean I have to stop loving my favorite cake! Yes, of all the interesting, decadent or obscure foods that I like, I would still pick a from-the-box “confetti cake” baked and thickly frosted by my lovely Mom, even now. And I’m not messin’ around here…it has to be Betty Crocker’s “Rainbow Chip” Cake mix frosted with the “Rainbow Chip” frosting. The other brands (ahem, Pillsbury & Duncan Hines) make you mix the confetti in yourself. Lame.

Rainbow Chip Cake + Rainbow Chip Frosting = an Ecstatic Birthday Girl who happens to be wearing cabbage patch kid ear muffs indoors.
Happy Wednesday!

Since I seem to be on the theme of food this month and I mentioned I’ve been working on an internationally inspired home cooked meals post, here’s what I’ve got cooking for a first week around the world in food. While all may not be worth making in a single week (lots of different ingredients), the following are a few recipes I’ve got on my list to make this summer:

Tikka Masala in the slow cooker :: I crave Indian food but don’t always want to go out to get it. This recipe looks simple enough (though time intensive).
Fish Tacos :: The pickled onions and salsa look delicious and fresh for a summer evening.
Thai Chicken Pizza :: A homemade alternative to Wednesday night’s Pizza Club.
Grilled Paella :: I love this traditional Spanish dish but it always seems so daunting to attempt. This recipe looks less scary.
Panzanella Bread Salad :: You may need some protein with this Italian salad but the ingredients seem perfect for summer! Perhaps add a grilled meatball or two as a side?
Mangia bene!

Hi all. Apologies for the quiet week last week. Moving into July, things should be a bit more calm and I promise (as always) to be a better blogger.
For today, I wanted to share my guest post on Peanut Blossom. My blogger buddy, Tiffany, asked if I’d contribute a recipe for her food photography endeavors. Follow the link to see the recipe for my family’s BBQ favorite, Asian Brocco-Slaw. The picture alone is making me crave it! Colorful and tasty!
Peanut Blossom is also great for ideas of things to do with and for the kiddies, more recipes, quilt inspiration, and much, much more! Thanks, again, Tiffany for inviting me to be a guest!
Check it out and enjoy!
